Pork Tenderloin with Fig Glaze

  • Preheat the oven to 350º. Rub the tenderloin with the garlic EVOO, then salt and pepper to taste. Roast tenderloin for about 35 minutes in the oven or until done.
  • Meanwhile, sauté the onions in the garlic EVOO until the onions are golden in color. Add the Fig Balsamic to cover the onions and heat until the onions have absorbed it.
