Chipotle Charred Pineapple Salsa
Ingredients
- 1 pineapple cored and sliced
- 2 tbsp Dash of Thyme Chipotle Infused Extra Virgin Olive Oil
- ½ cup chopped fresh cilantro
- ¼ cup finely chopped red onion
- 1 serrano pepper stemmed, seeded, and finely chopped
- Juice and zest of 1 lime
- 1/8 tsp. sea salt
Instructions
- Preheat grill to high heat. Toss sliced pineapple with Chipotle EVOO, salt and pepper. Grill 1-2 minutes per side or until nicely charred. Remove from grill, let cool and dice. Toss all ingredients together in a large bowl. Serve immediately or cover and chill until ready to use.
